Recipe Tag!

Thanks Tiff for the recipe tag. I love to share recipes so here are my favorite recipes:


Mrs Fields Chocolate Chip Cookies

Cream together:
1 c butter
1 c sugar
1 c brown sugar

Add

2 eggs
1 tsp vanilla
2 c flour
2 1/2 c oatmeal (blended to a fine powder)
1/2 tsp salt
1 tsp b soda
1 tsp b powder

Mix all ingredients well and add one 24 oz back of Chocolate Chips (I always add more;)  ) place on baking tray and bake at 375 for 6 - 8 minutes Dont over cook!! You can add walnuts if you wish I like them with or without. These are delicious. I am so going to make some this afternoon!
The Second recipe is something people who are from Utah or have ever been in Utah can appreciate Cafe Rio. I am going to do more than one recipe because to get the full effect you have to have it all right? So I am going to to the Pork the Cilantro Rice and the Tamitillo ranch dressing. I always make my own homemade tortillas as well just because they taste so much better. Honestly if you like Cafe Rio I think you will now love me for these!! Enjoy!

Cafe Rio Pork

4lb Pork roast

Rub Roast with the following mixture:
1tsp Salt
2Tbsp Brown Sugar
1tsp red pepper
1tsp cumin

Put roast in crock pot

Combined 
1 onion chopped
1c Chicken Broth
1 can coke
2 cloves minced Garlic

Pour over roast. Cook on low for 6 - 8 hours. I tend to put this all together before I go to bed and let it cook over night! 

Shred pork and then put back in the crock pot with 2 more cups of brown sugar. let it cook for an additional 2 - 3 hours. 

Cafe Rio Cilantro Lime Rice

4tsp Chicken Bouillon
4tsp Minced Garlic
1/2 bunch of Cilantro (my fav herb!!)
1 can diced green chiles
3/4 tsp salt
1Tbsp butter
1/2 onion chopped
3 cups rice (NOT INSTANT!!)

Put Chicken Bouillon Garlic, Cilantro, Green Chiles, Salt, Butter and onion in a blender and puree until completely smooth! Then put in a sauce pan with 3 cups of water. Boil once boiling add rice and simmer for about 30 minute or until soft. YUMMY!!

And last but not least (The best part in my opinion! I pour this on my burrito I love it so much!)

Tomatillo Ranch Dressing (Cafe Rio House Dressing)

1pk Hidden Valley Ranch Dressing Mix
1 c mayo
1 c Chopped Cilantro
2 cloves of garlic
3 tomatillo (Canned is fine you can find it on the ethnic isle)
1/3 c buttermilk
1/4 t cayenne pepper

Put al ingredients in the blender and mix until smooth. Refrigerate until ready to use

So there you have it all the cafe rio recipes I have. I hope you get a chance to use and enjoy them. On sunday I made the pork on its own and had it as out meat with sunday dinner served with roast and mashed potatoes and glazed carrots with of course home made fresh rolls. it was really Yummy. The missionaries LOVED IT!! I was hoping to have enough pork left to make burritos with but it was all gone! Oh well have to have a Cafe Rio Night Soon!!

Thanks for doing the tag ;) My pork recipe is a little different, I'll have to try yours and see the differece. I have yet to find a good tortilla recipe so if yours is worthy send it my way!

Ah, I will have to try the cookie one! I'm always shopping for a new choc chip recipe!
Hey quick question: how did you get "the latest from family/friends" on the side of your blog? I've been trying to find this somewhere but have had no luck!

Hi Alisha! Thanks for the recipes. I don't have a crock pot, but I'll just have to find another way to cook it. I always just load up on Cafe Rio when I'm there and it usually tides me over till I go again b/c I just get so fat when I'm there! I do love the food, but it's good that it's so far away. We were just there in January too, so this year it's a double whamee! I love their rance dressing, though, so I just might have to take that recipe on board as a regular occurance in our home!
